Samuel Johnson said that ‘a cucumber should be well sliced, and dressed with pepper and vinegar, and then thrown out, as good for nothing’.

Three centuries later we have got a less merciless idea of how to play with this rather innocuous edible.

INGREDIENTS:

50 ml Broken Clock Vodka
Splash Cynar Amaro
Top-up Bermondsey Cucumber Tonic

Garnish:
Cucumber Ribbon
Dehydrated Apple Slice

METHOD:

Build the cocktail over ice in a highball glass and slide the cool cucumber in and perch the apple slice on the top.
