If you haven’t twigged already, an aperitivo isn’t just for Christmas so stop beating about the bush and sup on this festive spritz from London’s The Hedgerow bar.

This countryside-inspired cocktail lounge is located in the 5-star Conrad London St. James hotel where the team have rustled up a menu of winter spritzes for December.

Here Elisa Segreto has crafted a Tom Price Collins using our awfully English vodka and a floral combination of camomile syrup and a delicate white peach and jasmine soda.

INGREDIENTS

50 ml Broken Clock Vodka
15 ml Camomile Cordial
20 ml Lime Juice
Top with London Essense White Peach and Jasmine Crafted Soda

METHOD

For the cordial put two parts white sugar to one part water in a saucepan with dried camomile flowers and heat on a low heat on a hob. Remove before boiling, discard the camomile and allow to cool before sieving, storing and refrigerating.

For the cocktail, combine the Broken Clock Vodka, camomile syrup and lime juice in a Boston Tin and shake until thoroughly chilled.

Strain into a highball filled with ice and top with the soda water before adding the garnish on top.
