A piquant Broken Clock Bloody Mary, dished up with slow cooked roast belly of pork – an awfully English dish which restores one’s foggy head just as much as it nourishes the weary body.

INGREDIENTS

50 ml Broken Clock Vodka
100 ml Fresh Pressed Tomato Juice
15 ml Lemon juice
15ml Umami Hot Mix
3 Basil Leaves

Garnish:
Cucumber Ribbon

Batch recipe for Umami Hot Mix:
150 ml Worcestershire Sauce
20 dashes Green Tabasco
1 pinch Salt
20 White Peppercorns
15 ml Balsamic Vinegar
½ clove Black Garlic

METHOD

Begin by making the Umami Hot Mix. Combine the ingredients and either vacuum pack overnight or infuse in a sealed jar for at least 24 hours. Sieve the mix and keep in the fridge.

For the cocktail, add the ingredients to a mixing glass along with plenty of ice and stir until chilled. Roughly strain into an iced highball glass, retaining the basil leaves, and top with the cucumber ribbon.
