Sometimes, exhilarating culinary and cocktail recipes can be those where their creators tap into their influences from around the world.

Indeed it was Georgian-era explorers who returned from their travels with many of the botanicals, flavours and cultural influences which we enjoy today, and which inspire the Broken Clock story.

This week’s Sunday Brunch cocktail recipe comes from Bloody Mary Challenge 2020 finalist @romain_dantuono from the luxe-boutique Mandrake Hotel in Fitzrovia, London.

Romain’s recipe take its inspiration from his own experiences working as a bartender in exotic climes as well as the Mandrake’s own fusion of European and South American cultures.

In fact, the hotel’s atmospheric Waeska Bar is adorned with a collection of rare artefacts, artworks and antiquities collected on adventures across the globe.

The recipe is titled “Love - Passion - Pepper” and the lighter body of the clarified tomato water is enhanced by the body and complexity of Broken Clock Vodka as well as the savoury sherry, sesame oil, smokey mezcal and Romain’s own eclectic spice mix.

INGREDIENTS:

45 ml Broken Clock Vodka with Spice Mix
10 ml Gem & Bolt Mezcal
10 ml Tio Pepe Dry Sherry
120 ml Clarified Spicy Tomato Water
5 Drops of Sesame Oil

Spice mix:
Tabasco (Chipotle, Jalapeno, Classic), Basil, Fresh Tomatoes, Chimichurri, Chipotle Paste, Worcestershire Sauce, Yuzu Wasabi, Celery Salt.

Garnish:
Jalapeño, Chilli and Tomato Salt Rim
Peruvian Marigold Leaf

METHOD:

Rim a highball glass and add one long shard of ice.
Build the drink in a mixing jar, stir and add to the glass.
Garnish with the marigold leaf.
