If one too many nightcaps left you feeling a tad sheepish this morning, then this sapid serving will unravel the most woolly of heads.

A suitably savoury Bloody Mary – with a dash of salty brine and a spoon full of spicy Gentleman’s Relish – is a particularly piquant pairing for this rare spring lamb served with baby carrots, peas and minted Jersey royals.


50 ml Broken Clock Vodka
12.5 ml Amalfi Lemon Juice
1 tsp Gentleman’s Relish
7 dashes Tabasco Sauce
5 g Tarragon Leaves
100 ml Fresh Pressed Tomato Juice
2 tsp Pickle Brine
Pinch of Salt and Pepper
Pinch of Sugar

Blanched Samphire Stack
Sea Salt


Throw all the ingredients into a mixing glass and allow the tarragon to infuse in the mix for half an hour or so.

Chill a highball glass in the fridge while you patiently wait.

Now chuck plenty of ice in the mixing glass and stir until cold. Add ice to your glass and roughly strain the mix into the glass, retaining and discarding the tarragon leaves.

Pop the samphire on top with a generous pinch of sea salt.
