The asparagus has long been extolled as an aphrodisiac – so if this Ramos Vodka Fizz doesn’t rouse you for Sunday Brunch then this fetching dish, topped with bacon crumb and poached egg, should somewhat help you rise to the occasion.

INGREDIENTS

50 ml Broken Clock Vodka
15 ml Lemon Juice
15 ml Lime Juice
20 ml Orange Blossom Honey Syrup
3 drops Vanilla Essence
One Egg White
25 ml Half and Half, Whole Milk and Double Cream
Top with Soda Water

Garnish:
Orange zest twirl

METHOD

Add all the ingredients except the soda to a well iced Boston Tin and shake until very cold.

Now fish out the ice – or strain the mix using another Boston Tin – and then dry shake the mix like your life depends on it, to create as much foam as possible.

Pour two thirds of the mix from a bit of a height into a chilled tumbler and then top up with some soda so the foam almost reaches the rim. Now carefully add the rest of the mix from the tin and the foam should rise a little proudly from the glass. Pop your garnish on the top and start supping.
