Inspired by the Georgian era pastime of undertaking European Grand Tours, this summery Sunday Brunch pairing takes our awfully English vodka on a jolly jaunt to sun soaked Italy.

A Sentimental Journey is loosely based on the Bellini cocktail but cannily substitutes the peach for pressed apple, earthy beetroot, acacia honey and fragrant thyme along with just a whisp of dry vermouth.

Created by the rather well-travelled Sam Heathcote at @golbornedeli, it’s paired with this rainbow coloured dish of creamy Puglia burrata, seasonal Italian nectarine and peppery rocket leaves, topped with grated Calabrian walnuts and a drizzle of chilli oil.

INGREDIENTS

50 ml Broken Clock Vodka
30 ml Pressed apple, Beetroot, Thyme and Honey Juice
125 ml Prosecco
10 ml @AsterleyBros Schofields’s Dry Vermouth

Garnish:
Rose Petal

METHOD

Chill a tumbler in the fridge or freezer.

When you’re ready to serve, add one large ice cube to the glass along with the vermouth and give it a good swizzle to coat the glass. Strain off the excess vermouth, retaining the ice in the glass.

Add the Broken Clock Vodka and juice to a well ice Boston Tin, shake and strain into the glass. Add the prosecco and float the rose petal on top.
